Broccoli is including as super food digestible carb vegetables and also a member of the cruciferous vegetable family. It's high in vitamins C and K and may reduce insulin resistance per serving.

Since broccoli season in Bali pretty bargain at the moment, so decide to provide healthy snacks for my son and gladly he like them.
I am hooked with the recipe here and a slight modified according to my liking
Healthy Baked Broccoli Tots
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings 20 tots
Ingredients
· 3 cups fresh broccoli, cuts and clean under running tap water
· 1 large egg
· 1/3 cup cheddar cheese
· 1/3 cup breadcrumbs, I homemade bread crumbs from multigrain bread
· 2 tablespoons chopped Italian parsley
· Himalayan salt to taste
· White pepper to taste
Direction
1. Preheat the oven to 180°C. Grease a baking sheet with a thin layer of olive oil or line with parchment paper and set aside.
2. Blanch the broccoli in boiling water for 1 minute then remove and shock with cold tap water to stop the cooking process. Drain well.
3. Chop broccoli finely and mix throughly with the egg, Italian parsley, cheddar, breadcrumbs, and seasoning.
4. Scoop about 1.5 tablespoons of mix using a small ice-cream scoop or your hands and gently press between your hands into a firm ball then shape into a tater-tot shape. It helps to wash your hands after every few tots to keep them from sticking onto your hands. Next, Place on your prepared baking sheet.
5. Bake until golden brown and crispy, 18-24 minutes, turning half way. Remove from the oven and enjoy hot with your favorite dipping sauce.
