Banana cake is definitely an alternative sweet treats to me, is versatile at the same time easy to make. Without any request, I will always bake this cake, as my son loves it for his tea or packed to school and sometimes he would love to have the cake with good spread nuttella on it, that’s his all time favorite.
I’ve tried different banana cake recipe to just make out which one is my favorite since that most of banana cake really looks real moist and soft, and I always tempted to bake especially when I have no time for the complex one.
To be honest, I’m not an expert baker but I love to bake for the love to my family, in fact, its nothing more special than to bake a sweet for the loved one with the healthiest ingredients on your own.
I once remember over the reading, mentioned that every baker has a good banana cake recipe as the cake has always given great compliment.
Over the time, I still searching and bake the perfect banana cake recipe, but then, I end up with so much love to all of them, any banana cake recipe will do the magic and indulge, I am precisely happy with all the result and Banana cake somehow holds a very dear place in my heart.
For this time, I go for banana cake with oil recipe, I thought it just attracted to give it a try. Shortly after understanding the recipe, I was thrilling to know the end result, seeing both composition on how simple the picture and uncomplicated the ingredients were attract m.
The recipe calls for cinnamon powder as I assume that the cake must have yummy baked goodies with earthy fragrant, I was full convinced and bake it right way.
At first attempt, it was succeed and I love it! The cake just delivers to my expectation, moist, soft and the taste even better the next day, all flavors and texture were perfectly well balanced.
Second attempt, I gone little further with some trial and error, exploring the flavor with matcha green tea powder, which is divided the batter into 2 parts and
The overall flavor was still the same, it doesn’t create different contrast to the cake, despite of that, I still love the cake.
Banana and cinnamon cake
Adaptation from Nigella Lawson
Ingredients
1 ½ cup plain flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
½ cup vegetable oil
¾ cup soft brown sugar here I use regular sugar mix with brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla essence
4 ripe bananas, mashed
½ teaspoon sea salt
2 eggs, lightly beaten
Method
Preheat oven to 170 degrees celsius and grease a loaf or ring cake tin. I use 8” loaf tin
Sift flour, baking powder, bicarbonate of soda, cinnamon and salt in a bowl. Add sugar and mix well.
Make well in a center, add mashed banana, eggs and oil.
Stir the batter until smooth.
Pour batter into prepared tin and bake for about 45-50 minutes.
Remove from oven and cool for 10 minutes before turning cake out on a wire rack.
